Study the front pages of your supermarket check-out’s tabloid-newspaper and magazine rack, and you will find lots of headlines that promise you rapid weight loss. Most of these articles are based on the silver-bullet theory of weight loss: Change one thing (eliminate carbs, lower your calorie intake, eliminate snacking, etc) and you can get the body you want. Unfortunately, it turns out that the human body is more complicated than that. Not all tricks work for all bodies. And in many cases, your body adjusts to new food patterns (e.g. Atkins-style low-carb diets) and eventually reverses the initial weight loss.

A better way to evaluate weight-loss strategies is a more rigorous statistical approach that examines the effect of a whole bunch of different factors on weight gain — not just one silver-bullet factor — and then tracks them over many years. And fortunately for all of us, that is exactly what a group of scientists who just published their work in the New England Journal of Medicine — Dariush Mozaffarian, M.D., Dr.P.H., Tao Hao, M.P.H., Eric B. Rimm, Sc.D., Walter C. Willett, M.D., Dr.P.H., and Frank B. Hu, M.D., Ph.D. — have done.

In their article entitled  Changes in Diet and Lifestyle and Long-Term Weight Gain in Women and Men , the group examined two decades worth of eating and weight data for more than 120,000 U.S. men and women. With the enormous statistical power provided by this large sample size, they were able to isolate the food groups associated with weight loss and gain. Some of the conclusions are obvious (french fries make you fat!), but others are surprising, and suggest that there is a realistic path toward weight loss for many of us.

The article contains all the usual scientific caveats you would expect — P values and confidence intervals and so forth — but since bathing-suit season is upon us, and you are in a hurry to lose a few, I will skip straight to the highlights.

Eating fruits and veggies regularly helps you lose weights — in part, presumably, because the fiber content keeps you full longer. The effect is greater for fruits (-.69 lbs per 4-year period) than vegetables (-.25 lbs per 4-year period). Anecdotally, I can attest that I lost a lot of weight after I started making a fresh fruit smoothie every morning about four years ago. Eating nuts also has a pronounced beneficial effect (-.78 lbs per 4-year period) — with the protein and fiber both delaying carb absorption.

It turns out that the Arizona desert, in the summertime, is the perfect place to make crock pot yogurt.  Yogurt is a good option for lowcarbing. If made with whole milk, half & half, or cream, you get a fresh, high fat content yogurt, which is the main reason to make your own.  It can be difficult to find good fat yogurt in the grocery stores.  I found a pretty easy recipe , though it does take several hours for the bacteria to do it's thing to the milk.  It's my understanding that the bacteria, which I took from a store bought yogurt, eats up the lactose (evil carbohydrates) in the milk.  With the majority of the lactose burned up, the milk, transformed into yogurt, becomes much lower carbohydrate.
